The Ultimate Protein Bar

INGREDIENTS

  • 1/2 cup sunflower seeds
  • 1/2 cup peanut or almond butter
  • 2 scoops protein powder of choice
  • 1/3 cup raw cacao powder
  • 2 Tbsp sweetener of choice 
  • 1 pinch salt
  • 8 Tbsp melted coconut oil
  • 8 squares 85% dark chocolate 

INSTRUCTIONS

  1. Pulse sunflower seeds in a food processor (leave some chunks for texture).
  2. Mix with all other ingredients except the dark chocolate.
  3. Pour into a lined baking dish and freeze until firm.
  4. Cut into 16 bars and return to the freezer.
  5. Melt dark chocolate over a double boiler and drizzle over bars.
  6. Store in the fridge or freezer.
