Raspberry Lime Rickey Cocktail

INGREDIENTS

  • 237 ml water
  • 100 grams sugar
  • 20 grams Little Beauties freeze dried raspberries
  • 30ml gin (omit for a mocktail version)
  • 15 ml fresh squeezed lime juice
  • 237 ml Sparkling Water
  • Lime slices
  • Extra freeze dried raspberries

INSTRUCTIONS

  1. Add the water, sugar and freeze dried raspberries to a small pot and bring to a simmer. Simmer for 2-3 minutes then remove the pot from the heat. Stir well to dissolve the sugar, soften the raspberries and infuse the flavor into the syrup. 
  2. Set the syrup aside to cool.
  3. Fill a tall glass with ice. 
  4. Pour 80 ml raspberry syrup into the glass followed by the gin, lime juice, and sparkling water. Stir in the lime slices and place one slice on the rim of the glass for a garnish.
  5. Add a few extra freeze dried raspberries and a fun straw then enjoy!

*Note- This recipe makes enough raspberry syrup for 4 drinks. Store the raspberry syrup in the fridge for up to two weeks, using it any time you crave a Raspberry Lime Rickey.
