Panforte

INGREDIENTS

  • 150g flour
  • 50g cocoa powder
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 cup roasted hazelnuts, chopped
  • ¾ cup roasted almonds, chopped
  • ¾ cup honey
  • ¼ cup roasted walnuts, chopped
  • ¼ cup dried figs, chopped
  • ¼ cup dried apricots, chopped
  • 100g glace cherries, chopped
  • 100g mixed peel
  • 200g dark chocolate buttons
  • ½ cup brown sugar

INSTRUCTIONS

  • Sift the flour and cocoa into a large bowl. Add the mixed spice, cinnamon, chopped nuts, dried fruit, cherries, and mixed peel. Set aside.
  • In a saucepan, melt the dark chocolate, honey, and brown sugar over low heat, stirring until smooth.
  • Pour the melted chocolate mixture into the dry ingredients and stir until everything is well combined.
  • Press the mixture evenly into a tin lined with baking paper.
  • Bake in a preheated oven at 180°C for 30-40 minutes, or until the center feels firm to the touch.
  • Let it cool in the tin before slicing into squares or wedges. Enjoy!
