No Bake Chocolate Cheesecake

INGREDIENTS

Base 

  • 250g Plain Chocolate Biscuits 
  • 2 tsp Brown Sugar 
  • 1/3 cup Butter, melted 
  • Pinch of Salt  
     

Filling 

  • 2 x blocks (total 500g) Cream Cheese, at room temperature ½ cup Brown Sugar 
  • 1 tsp Vanilla Extract  
  • 200g Chocolate, melted 
  • 1 ½ cups Full Cream 
     

Optional Toppings 

  • Whipped Cream 
  • Chocolate, grated into flakes 

INSTRUCTIONS

  1.  Add all base ingredients to a blender or food processor and blend until combined/mixture is slightly moist.
  2. Press evenly into the base of your décor container. Place in the freezer.
  3. Meanwhile, blend cream cheese, brown sugar and vanilla until just combined. Add melted chocolate and full cream, blend until all ingredients are combined.
  4. Pour mixture over base. Return to freezer and freeze until firm (roughly three hours).
  5. Remove at least 20 minutes prior to serving.
  6. Serve with optional toppings.
