Low Carb Custard Bars (Nanaimo Bars)

INGREDIENTS

Base:

  • 1/4 cup butter, melted
  • 2 heaped Tbsp cacao powder
  • 2 Tbsp sweetener (e.g. Norbu or Natvia)
  • 1 small egg, beaten
  • 1 tsp vanilla extract
  • 1/2 cup almond meal
  • 1/2 cup desiccated coconut
  • 1/4 cup chopped walnuts (optional)

Filling:

  • 1/3 cup butter, softened
  • 2 Tbsp full-fat coconut milk
  • 1 tsp vanilla extract
  • 1.5 Tbsp custard powder
  • 1 cup powdered sweetener (e.g. ground Norbu or Natvia)

Topping:

  • 1/2 bar 85% dark chocolate
  • 1 Tbsp butter

INSTRUCTIONS

  1. Line a loaf pan with baking paper.
  2. Mix base ingredients, press into the pan, and freeze.
  3. Blend filling ingredients until smooth and spread over the base. Return to the freezer.
  4. Melt chocolate and butter together, pour over the filling, and refrigerate.
  5. Slice into 10 bars and enjoy!
