Lebanese Fresh Tabbouleh Salad

INGREDIENTS

  • 225g bulghur wheat
  • 600ml boiling water
  • 4 tbsp lemon juice
  • 2 tbsp olive oil
  • 8 tbsp parsley, chopped
  • 8 tbsp spring onions, chopped
  • 4 tbsp mint, chopped
  • 4 tomatoes, peeled and chopped
  • Pinch of salt and pepper

    For Garnish:

  • 1 lemon, cut into wedges
  • 1 tomato, diced
  • Black olives

INSTRUCTIONS

  1. Place the bulghur wheat in a bowl and pour over the boiling water.
  2. Let it sit for 10-15 minutes, or until the water is fully absorbed.
  3. Add the lemon juice, olive oil, parsley, spring onions, mint, and tomatoes. Mix well.
  4. Season with salt and pepper to taste.
  5. Garnish with lemon wedges, diced tomato, and black olives.
  6. Serve as part of a Mediterranean mezze platter with falafel and hummus, or enjoy as a light, refreshing salad.
