Keto Seeded Crackers

INGREDIENTS

  • 1/3 cup almond flour
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup chia seeds or flaxseeds
  • 1/3 cup sesame seeds
  • 1 tbsp psyllium husk
  • 1 tsp salt
  • 1/4 cup melted coconut oil
  • 1 cup boiling water

INSTRUCTIONS

  1. Preheat Oven: Set your oven to 150°C (300°F).
  2. Melt Coconut Oil: In a heatproof bowl, melt the coconut oil in the boiling water.
  3. Mix Ingredients: In a separate bowl, combine almond flour, sunflower seeds, pumpkin seeds, chia seeds (or flaxseeds), sesame seeds, psyllium husk, and salt.
  4. Combine: Pour the melted coconut oil mixture into the dry ingredients and stir until well mixed.
  5. Prepare for Baking: Spread the mixture evenly on a baking tray lined with greaseproof paper. Sprinkle with extra salt if desired and slice into squares.
  6. Bake: Bake for 45 minutes to 1 hour, or until the crackers are crunchy and golden.
  7. Cool and Serve: Let the crackers cool completely before breaking into pieces.
