Keto Cheesecake

INGREDIENTS

For the Base:

  • 1 cup almond flour
  • 3 1/2 tbsp butter, melted
  • 1 tsp cinnamon
  • 1/3 cup desiccated coconut

For the Filling:

  • 250g cream cheese
  • 200ml cream
  • WeightWatchers jelly (flavor of choice)

INSTRUCTIONS

Prepare the Base

  1. Mix Ingredients: In a bowl, combine almond flour, melted butter, cinnamon, and desiccated coconut.
  2. Press into Mold: Transfer the mixture to a cheesecake mold and press it down firmly to form an even layer.

Prepare the Filling

  1. Prepare Jelly: Dissolve the WeightWatchers jelly in 1/2 cup hot water and let it cool.
  2. Whisk Cream Cheese: In a separate bowl, whisk the softened cream cheese until smooth.
  3. Add Cream: Slowly pour in the cream while continuing to whisk until fully combined and fluffy.
  4. Incorporate Jelly: Gently whisk in the cooled jelly mixture until well combined.
  5. Assemble: Pour the filling over the prepared base.

Chill and Serve

  1. Refrigerate: Place the cheesecake in the refrigerator for approximately 1 hour, or until set.
  2. Optional: Serve with fresh berries if desired.
