Homemade Honeycomb Crunch

INGREDIENTS

  • 1 cup white sugar
  • 1/4 cup golden syrup (or light corn syrup)
  • 3 tbsp water
  • 2 tsp baking soda

INSTRUCTIONS

  1. Prepare the Tin: Grease a slice tin and set it aside.
  2. Make the Honeycomb Mixture: In a small saucepan, combine the sugar, golden syrup, and water. Stir over medium heat until the sugar dissolves.
  3. Boil the Mixture: Bring the mixture to a boil and let it simmer for 5 minutes.
  4. Add Bicarbonate of Soda: Move your tin close to the stove. Remove the saucepan from the heat and quickly stir in the baking soda. The mixture will froth up and expand rapidly, so be prepared.
  5. Pour & Cool: Immediately pour the frothy mixture into the prepared tin. Let it cool and set.
  6. Score the Honeycomb: Once it begins to set, use a sharp knife to score the surface into bite-sized squares. This will make it easier to break into pieces once fully set.
  7. Optional Chocolate Coating: For an extra treat, dip the honeycomb pieces in melted chocolate to coat.
  8. Store: Keep the honeycomb in an airtight container to maintain its crunch.
