Grandma’s Famous Sponge Cake

INGREDIENTS

  • 245g water
  • 275-280g eggs (about 5 size 7 eggs)
  • 700g Grandma's famous Bin Inn Sponge Mix

INSTRUCTIONS

  1. In a mixing bowl, combine the water, eggs, and sponge mix. Mix on low speed for 1 minute.
  2. Scrape down the sides of the bowl, then whisk on high speed for 5 minutes until the batter is smooth and airy.
  3. Divide the batter evenly between two 9-inch cake tins (approximately 450g per tin).
  4. Bake in a preheated oven at 180°C for 20 minutes or until a skewer inserted into the center comes out clean.
  5. Allow the cakes to cool completely before serving or decorating.
