Gluten-Free Vegan Peanut Butter Fudge

INGREDIENTS

  • ⅓ cup Fresh Ground Peanut Butter (Bin Inn)
  • ¼ cup Refined Coconut Oil
  • ½ cup Pure Maple Syrup
  • 2 tsp Vanilla Extract
  • ¼ tsp Sea Salt
  • Chopped Roasted Salted Peanuts (optional garnish)

INSTRUCTIONS

  1. In a heatproof glass bowl, combine the peanut butter, coconut oil, maple syrup, vanilla extract, and sea salt.
  2. Place the bowl over a pot of gently boiling water (double boiler method) and stir the mixture until it becomes smooth and well combined.
  3. Line a loaf pan or small glass dish with plastic wrap, ensuring it covers the sides for easy removal.
  4. Pour the smooth fudge mixture into the prepared pan and spread it evenly. Tap the pan on the counter to remove any air bubbles.
  5. Optional: While the fudge is still soft, sprinkle chopped roasted peanuts or chocolate chips on top for added texture and flavor.
  6. Transfer the pan to the fridge and let the fudge chill for 3-4 hours, or until fully solidified.
  7. Once set, remove the fudge from the pan, peel off the plastic wrap, and cut it into mini squares.
  8. Store the fudge in the fridge or freezer, as the coconut oil will soften at room temperature.
