1 cup Cherries, chopped (reserve a few for decoration)
1 cup Sultanas
½ tsp Salt
¾ cup Orange Juice
1 tsp Almond Essence
1 tsp Brandy Essence
1 tsp Cinnamon
2 cups Mixed Nuts (Walnuts, Brazil Nuts, and Almonds), chopped (reserve a few for decoration)
½ tsp Gluten-Free Baking Powder
1 small cup Mixed Peel
1 tsp Nutmeg
1 tsp Curry Powder
3 Eggs
1 tsp Lemon Essence
INSTRUCTIONS
Preheat your oven to 125°C. Line the bottom of a 20cm cake tin with a layer of cardboard and baking paper.
Grate the rind of the oranges and finely chop the dates. Chop most of the nuts and cherries, leaving a few whole for decoration.
In a large bowl, sift together the gluten-free flour, baking powder, and all the dry ingredients (salt, cinnamon, nutmeg, curry powder, mixed peel, dates, cherries, sultanas, and mixed nuts).
In a separate bowl, beat the eggs and combine with the orange juice, almond essence, brandy essence, and lemon essence.
Gradually add the wet ingredients to the dry mixture and stir until well combined.
Pour the mixture into the lined cake tin and press it down firmly.
Decorate the top with reserved cherries and nuts.
Bake in the preheated oven at 125°C for approximately 2 hours, or until a skewer inserted into the center comes out clean.
