Gluten Free Hot Cross Buns

 Bin Inn Hot cross buns

INGREDIENTS

For the dough:

  • 6g active dry yeast
  • 130ml warm milk
  • 1 tsp caster sugar (to activate yeast)
  • 30g caster sugar (for dough)
  • 200g Bin Inn Gluten Free Flour Mix with Xanthan Gum
  • 60g tapioca starch
  • ½ tsp fine salt
  • 1 tsp cinnamon
  • ½ tsp mixed spice or allspice
  • ¼ tsp nutmeg (optional)
  • 50g unsalted butter, melted
  • 1 large egg
  • Zest of 1 orange
  • 75g dried mixed fruit (a combination of raisins, sultanas, currants, and mixed peel)

For the cross paste:

  • 20g Bin Inn Gluten Free Flour Mix
  • 20ml water

For the glaze:

  • 1 Tbsp icing sugar
  • 1 Tbsp orange juice (fresh or from a bottle)

INSTRUCTIONS

  1. Activate the yeast:
    Gently warm the milk until it’s just lukewarm (not hot), then stir in 1 teaspoon of caster sugar and the yeast. Set aside for about 15 minutes, or until a foamy layer forms on the surface.

Prepare the dry ingredients:

  1. In a large bowl, mix together the flour mix, tapioca starch, remaining caster sugar, salt, cinnamon, mixed spice, and nutmeg.

Combine and mix:

  1. Once the yeast is ready, add it to the dry mixture along with the melted butter, egg, and orange zest. Stir or beat the mixture for a couple of minutes until you have a thick, sticky batter. Fold in the dried fruit until evenly spread throughout.
  2. Line a baking tray with parchment paper. Wet your hands (this makes handling the dough much easier) and divide the dough into six equal portions. Shape into smooth buns and place them on the tray with enough space between for rising.
  3. Lightly oil a piece of cling film and loosely cover the buns, ensuring they have space to expand. Leave them in a warm spot for 1 hour to rise.
  4. Heat your oven to 200°C (fan bake). For a softer crust, place a small heatproof dish of water on the bottom shelf to create steam during baking.
  5. Mix the flour and water into a smooth paste and transfer to a small piping or ziplock bag. Snip off the tip and pipe a cross over each bun.
  6. Place the buns in the oven on the middle shelf and bake for 15 minutes, or until golden and lightly firm on top.
  7. While still hot, brush the tops with the orange glaze made by mixing icing sugar and orange juice. Let them cool on a rack — or enjoy them warm and fresh!

Tip -  These buns are best enjoyed on the day they’re baked.
