Preheat the oven to 160°C (320°F). Lightly grease and line a cake tin.
In a small saucepan, heat the brown sugar, butter, and golden syrup over low heat, stirring occasionally until melted and fully blended. Remove from heat and allow it to cool slightly.
Once cooled, mix in the milk and eggs, whisking until smooth.
In a large bowl, combine the Bin Inn Gluten Free Flour Mix, salt, ground ginger, cinnamon, and Bin Inn Gluten Free Baking Powder.
Make a well in the centre of the dry ingredients and pour in the liquid mixture. Mix well to combine, ensuring there are no lumps.
Pour the batter into the prepared cake tin and smooth the top.
Bake for about 1 – 1 hour 15 minutes, or until the cake is firm to the touch and lightly golden brown on top. Check after 1 hour.
Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
