Gluten Free Fruit Cake

 Bin Inn Gluten Free Fruit Cake

INGREDIENTS

  • 350g Bin Inn Gluten Free Flour 
  • 750g Fruit Mix (dried fruit like sultanas, raisins, currants, or a pre-mixed dried fruit blend)
  • 400ml Warm Water or Ginger Ale
  • 3 Eggs, Beaten
  • 4 tsp Bin Inn Gluten Free Baking Powder
  • 1 tsp Mixed Spice

INSTRUCTIONS

  1. Soak the fruit mix in warm water or ginger ale overnight.
  2. Preheat the oven to 165°C. Line a 23cm round cake tin with baking paper.
  3. In a large bowl, combine the Bin Inn Gluten Free Flour Mix, Bin Inn Gluten Free Baking Powder, and mixed spice.
  4. Add the beaten eggs to the dry ingredients and mix well.
  5. Gradually pour in the soaked fruit mix (including the liquid), and stir until everything is combined.
  6. Pour the batter into the prepared cake tin and spread evenly.
  7. Bake for about 1 to 1 hour 15 minutes, or until cooked through. To check if the cake is ready, insert a knife or skewer—if it comes out clean, the cake is done.
  8. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
