Gluten-Free Christmas Shortbread

INGREDIENTS

  • 250g Butter
  • 1 ½ cups Maize Cornflour
  • ½ cup Rice Flour
  • ¾ cup Gluten-Free Icing Sugar

INSTRUCTIONS

  1. Preheat your oven to 150°C and line a baking tray with baking paper.
  2. In a food processor, combine the butter, maize cornflour, rice flour, and gluten-free icing sugar. Process until the mixture forms a smooth dough.
  3. On a gluten-free floured surface, roll out the dough to about 1cm thickness.
  4. Cut the dough into rectangles and place them on the prepared baking tray.
  5. Prick each piece with a fork for a classic shortbread look.
  6. Bake for 25-30 minutes, or until the shortbread is pale but crisp.
  7. Allow to cool completely before serving.
