Gluten Free Cheese Cake (Lemon, Lime, Orange or Berry)
INGREDIENTS
Base:
200g almond flour
50g sugar (OR sugar equivalent sweetener)
1 tsp grated lemon rind (OR lime OR orange)
1 tbsp lemon juice (OR lime OR orange)
75g butter (melted)
Topping:
3 or 4 tsp gelatine (3 for lemon, lime or orange, 4 for berry)
2 tbsp water
250g cream cheese
250ml cream (whipped) or sour cream
1/3 cup sugar (OR sugar equivalent sweetener)
2 tbsp lemon juice, (OR lime OR orange
OR ½ cup frozen berries – defrosted and blended)
1 tsp lemon rind (OR lime OR orange, OMIT for Berry)
1 tsp vanilla extract (or essence)
INSTRUCTIONS
Base:
Melt butter.
Combine almond flour, sugar, rind, juice and melted butter and mix well.
Press into the base of a lined, 20cm spring-form tin or equivalent size dish.
Chill while preparing topping.
Topping:
Combine gelatine and water and leave to soak (at least 10 mins).
Whip cream.
Combine whipped cream and cream cheese and beat together.
Add sugar, juice OR blended berries, rind (not for berry), and vanilla (mixture must be at room temperature or it will cause problems with the gelatine).
Beat together until sugar is fully dissolved.
Heat gelatine and water mixture over hot water or on low setting in microwave to dissolve the gelatine.
Add melted gelatine to the mixture and beat in.
Pour the topping into the tin on top of the base and chill until set.
