Gluten Free Apple Muffins

INGREDIENTS

  • 360g Bin Inn Gluten Free Flour Mix 
  • 1 ½ Cups Apples, peeled, cored, and diced
  • ½ Cup Sultanas
  • ½ Cup Sugar
  • 2 tbsp Cider Vinegar or sherry
  • 2 Eggs
  • ¾ Cup Milk
  • 100g Butter, melted
  • 1 tsp Mixed Spice
  • 2 tsp Bin Inn Gluten Free Baking Powder

INSTRUCTIONS

  1. Preheat the oven to 210°C. Grease your muffin pans with a little of the melted butter.
  2. In a bowl, melt the remaining butter. Add eggs, milk, and sugar, and mix well.
  3. In another bowl, mix the apples, sultanas, and cider vinegar.
  4. Add the apple mixture, flour, baking powder, and mixed spice to the egg mixture. Stir until just combined. The mixture will be wet.
  5. Spoon the mixture into the muffin tin, dividing it evenly.
  6. Bake for 20–25 minutes, or until golden brown and a skewer comes out clean.
