Fermented Carrots

INGREDIENTS

These spiced fermented carrots are packed with flavour and probiotics. Enjoy them as a tangy snack or side!

Ingredients

  • 2 kg grated or sliced carrots
  • *Saline solution (see below)
  • 4 cinnamon sticks
  • 20 cardamom pods
  • ½ cup whey powder

 

 

INSTRUCTIONS

  1. Pack the carrots tightly into a large sterilised jar.
  2. Add the cinnamon sticks, cardamom pods, and whey powder.
  3. Pour the saline solution over the carrots until fully submerged, then seal the jar with a lid.
  4. Store in a dark cupboard for 3–4 days, then enjoy!

Saline Solution: 

  1. Dissolve 5 tablespoons of sea salt in 8 cups of water.
