1 cup hot coffee (1 teaspoon instant coffee dissolved in 1 cup boiling water)
1 teaspoon vanilla essence
INSTRUCTIONS
Preheat Oven: Preheat your oven to 160°C Grease and line your cake tin with baking paper for easy removal.
Mix Dry Ingredients: In a large bowl, add the sugar. Sift together the flour, baking powder, baking soda, and cocoa powder, then add these to the bowl with the sugar. Whisk the dry ingredients together until well combined.
Add Wet Ingredients: Pour the lightly beaten eggs, oil or melted butter, and milk into the dry mixture. Mix until smooth and fully combined.
Incorporate Coffee and Vanilla: Stir in the hot coffee and vanilla essence. The batter will be thin, but this is normal.
Bake: Pour the batter into the prepared cake tin. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the centre comes out clean.
Cool and Serve: Allow the cake to cool in the tin for a few minutes before turning it out onto a wire rack to cool completely. Due to the cake's stickiness, using baking paper is recommended.
