Combine the cherry juice and sugar in a medium saucepan. If using fresh cherries, add them now.
Cook over medium-to-low heat for 20–30 minutes, stirring frequently to prevent sticking or burning.
The syrup is ready when it coats the back of a spoon. To test, carefully draw a line through the syrup on the spoon with your finger. If the line stays clean and the syrup doesn’t run back together, it’s ready.
Remove from heat and allow to cool.
