Banana Muffins
INGREDIENTS
1 ½ Cups Flour (plain, wholemeal, or a mix)
1/3 Cup Sugar
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
3 Large Ripe Bananas
1 Egg, beaten
80g Butter, melted
INSTRUCTIONS
Preheat your oven to 180°C (350°F).
In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mash the ripe bananas with a fork.
Add the beaten egg and melted butter to the mashed bananas, mixing well to combine.
Pour the wet mixture into the dry ingredients and gently stir until just combined—be careful not to overmix.
Scoop the batter into a greased muffin tin and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
Allow the muffins to rest for 5 minutes in the tin, then transfer them to a wire rack to cool.
